Would you like to make a tasty yet easy green salad that everyone in the family can enjoy? Then look no further because I have the recipe to two great salads that are sure to please. Children are famous for not wanting to eat their vegetable especially the ones that are green. However, no matter what your age this salad will be a hit, I should know because I have three children who absolutely despise most vegetables but when it comes to these two salads I have no problem getting them to eat. Salad number one: Red Apple Salad
2 medium red apples
1 large head of iceberg lettuce
favorite salad dressing
First, make sure the apples , lettuce, cucumber, and carrots have all been washed and thoroughly cleaned. You may use your discretion if you like to leave the apple and cucumber peeling on. Although generally the apples are peeled and cut into bite sizes as well as the cucumber.
Secondly, take all of the aforementioned ingredients and toss them in a large serving bowl along with the iceberg lettuce.
Serve on salad plates with your favorite dressing topped off with a shreded carrot garnish.
This second salad is my favorite, Mandarin Orange Spinach Salad
2 bunches of spinach ( about 2 pounds)
1 can of mandarin oranges
croutons or crackers
raspberry vinaigrette dressing
Thoroughly wash the spinach greens making sure to scrubs out all dirt (sand ) that may have collected. After washing, place the spinach on the salad plate. open the mandarin oranges and drain the juice off of them. Spoon on the desired amount of fruit onto the spinach, then drizzle about a table spoon of raspberry vinaigrette dressing on top. This dressing is sweet and bitter so a little goes a long way.
Serve with your favorite crackers or croutons. Enjoy!
